豬肘 2000克,紅棗300克,冰糖 300克,甜橙 400克,菜油、川鹽、姜、蔥、料酒各適量。 </p>

制作過程:

1、豬肘去骨洗凈搌干水,入鍋炙皮后刮去雜質,洗凈,皮向下放置菜墩上,在肉上剞十字花刀,深度為豬肘肉厚度的1 / 3 ~ 1 / 2
處 ,投入放有姜、蔥、料酒和川鹽的湯鍋中略煮,待已除去血污和異味時,撈出入蒸碗中定碗。

2、紅棗洗凈去核,放入蒸碗內。鍋置火上,放菜油燒熱后,放入冰糖(捶細)炒化,加水燒沸成糖色,舀入蒸碗內,上籠蒸約3小時至極粑軟時出籠,撈出紅棗,把汁潷入鍋后,將豬肘翻扣入盤,紅棗圍擺在其周圍。
